Adding Iron to Food Through Cooking
Many are trying to decrease the amount of red meat they are eating these days. There are many reasons, including reducing your carbon footprint or intake of saturated fat.
Wait, what about the iron? Iron is an essential mineral which carries oxygen in the blood to all parts of our body. Plant sources (non-heme iron) are great, but not as easily absorbed as those from animal (heme iron) sources.
One simple way to increase your iron intake is to return to an old tradition, cooking in cast-iron! This is also a great way for vegetarians and vegans to add a little extra iron into their diet. The amount of iron that can be transferred to foods will vary based on factors including the food’s acidity, moisture content, and cooking time.
